I can think of at least two uses for a death mask. The first would be to make a cast of the dead person's face as a sort of memorial for the living to remember the dead. These were taken throughout history and included many famous people. For Ancient Egyptians, death masks were used for the mummies so the soul of the dead could return to the body.

In Ancient Egyptian belief, the body was crucial for the dead to be resurrected in the afterlife, and the spirit needed to be able to recognize themselves, so not only did they preserve the body through mummification so there was a body to return to, but a mask was placed over the face so the spirit could find the proper body.

There were probably more reasons, such as the death masks used in Mycenae, pre-Colombian Peru and elsewhere, but those are the two that first came to mind.
