Because as an employee it’s not smart to write a letter demanding that you be able to continue to work from home, receive fair severance, etc. It’s combative from the start to someone who can absolutely fire you. Employment is voluntary and employees are in no position to immediately make demands of new ownership. We live in a capitalist society where the person or people that own a company make decisions for said company.
