I never really understood the point of the saying. We're obviously living well outside the era in which that tradition or whatever you'd call it was created based on out-dated beliefs, so why continue? Sneezing is a normal biological function. I don't need someone to say, "Bless you" after I sneeze any more than I need it after fouling up a toilet bowl, farting (sharting!), or having hiccups.
In short, it's stupid. It serves no purpose as I feel neither damned, dirty (well, maybe physically in some events), or in some mystical danger after one of these perfectly normal events take place.
It may have originally been religious in nature, but it is just being polite now. There was a fun article about atheists on cracked.com recently.
