Do I need to bless a shield before attacking undead? Are there sanctified shields? If so, how do I know if they are?

You can use the Abandoned Inn crystal to check them for sanctification if you are near Wehnimer's Landing.

And yes, you need to bless or use a sanctified shield (as a paladin) in order to use offensive shield maneuvers against undead. Noncorporeal undead won't be affected by shield maneuvers even with a blessed/sanctified shield though.
