I am wondering what your favorite foods are to eat are.

I just ate some Combos, thems shits is good, as they say in the ghetto. It was also pepperoni pizza flavor.

P.S. What's your favorite snackytime snack there? Mine's beef jerky.

Snacks?

Superpretzels (Microwavable pretzels) with Jalepeno cheddar cheese for dipping.

I've also recently discovered Pretzfuls. Soft Pretzels filled with Pizza. How can you go wrong?

TOK Guy, you have gotsta try out the lemon chumus with pita bread, I particularly like it based on my jewrian ancestory, but good ish nonetheless.

Snacks...depends what we have in.

I can eat pickled onions or cockles fresh from the jar till the jar is empty.

houmous with doritos is cool.

Tomatoes with....well tomatoes is enough.

Sundried tomatoes.....oooh yes!

As someone has mentioned Jalpenos, there are some Jalapeno peppers we get from Tescos with a kind of cheesy filling and breadcrumb coating that I could eat buckets of....I think I should stop now.

It's goood, that's what! It's made with bacon, water chestnuts, and chicken livers (only I sometimes leave out the chicken livers and substitute a very special ingredient.). I'll post a recipe later. Right now, I gotta go make some! :D

Cowardly Rumaki (Liverless)

Ingredients:

1 lb. bacon
4 cans whole water chestnuts
1/4 c. soy sauce
1/2 c. brown sugar

Directions:

Cut bacon in thirds. Wrap a strip of bacon around a water chestnut and poke a toothpick through the bacon and water chestnut. Place each water chestnut that has been wrapped on broiler pan. Broil until bacon is crisp. Mix soy sauce and brown sugar together in bowl. Place each water chestnut with bacon in sauce and marinate for a couple of seconds. Serve hot. Serves 10.


"Real" Rumaki

Ingredients:

12 slices bacon, halved crosswise
12 ounces chicken livers, halved
12 whole water chestnuts, halved
toothpicks

Marinade:
¼ cup soy sauce
1 teaspoon fresh minced ginger
2 tablespoons dry sherry
1 teaspoon sugar

Directions:

Begin with the marinade: Combine soy sauce, ginger, sherry and sugar in a small bowl. Add the chicken livers and water chestnut pieces and marinate them in the refrigerator for ½ hour.

Place 1 chicken liver piece and 1 chestnut piece in the center of each bacon-half, wrap, and secure with a toothpick. Place the Rumaki on a broiler pan or shallow baking pan and broil, about 5 or 6 inches from the heat, until the bacon is crisp, about 10 to 15 minutes. Or, you may bake the appetizers in a 375° oven for 20 to 25 minutes. Serve hot. Makes 24 appetizers.

Now...my Secret Recipe Rumaki

Ingredients:

one pound bacon
2 cans water chestnuts, halved
1 package of Lil Smokies (little sausages)
one small jar smooth peanut butter (Yes, peanut butter!)
one small jar honey
toothpicks

Directions:

Start by cutting the pound of bacon rashers into halves. Brush one side of each half-rasher lightly with honey. In the center of each half-rasher, place 1 chestnut piece, a little dab (about the size of a dime) of peanut butter, and a Lil Smokie. Wrap and secure with a toothpick. Drizzle each Rumaki with honey and place on a broiler pan or in a shallow baking pan. Broil, about 5 or 6 inches from the heat, until the bacon is crisp (about 10 to 15 minutes).

It does go very well with the ones with the liver in them, Raven! Personally, I love all of them, but the family threatens me with death and dismemberment (not necessarily in that order) if I don't make the peanut butter ones at every holiday. :)

I usually pre-cook chicken breasts and cut them up for snaking, trying to step away from the bad stuff. Unfortunately, mouth-hungry foods get eaten too much and not in healthy amounts.

Heh. Sorta, TOJ. I'm a lacto-ovo-vegetarian, for the most part. I do eat seafood and eggs regularly. I'll occasionally have a bit of bacon (like in the last recipe...I wouldn't eat the chicken livers), or some other meat. For me, it is not an ideological decision. It's more what I like and what I don't like. :)

1 pound shelled walnuts -- toasted
1/2 pound blanched almonds -- toasted
1/2 pound shelled pistachios -- toasted
2/3 cup brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 pound unsalted butter -- melted
1 pound phyllo pastry sheets
Orange Scented Simple Syrup
2 cups sugar
2 cups water
1/2 cup orange blossom honey
1 teaspoon vanilla
1/2 lemon -- juiced
2 large orange peel -- sliced
1 large cinnamon stick
3 cloves

Preheat oven to 350 degrees F.

Finely chop the nuts in a food processor or coffee grinder. Transfer nuts to a bowl and mix in brown sugar, ground cinnamon, and cloves.

Brush a 13 by 9-inch baking pan with melted butter and set aside. Cut a piece of cardboard into a 13 by 9-inch rectangle. Unroll the phyllo dough and lay the sheets flat on a work surface. Set the cardboard template on the stack of phyllo and trim the excess so they fit the pan. Keep the pastry covered with a damp, not wet, towel as you work to prevent drying out.

To build the baklava, you will alternate 3 layers of dough with 2 layers of nuts. Start with a stable base of 8 sheets on the bottom, brushing each with melted butter. Spread 1/2 the nut mixture evenly over the stacked sheets. Cover with 4 sheets of phyllo, painting each with melted butter, then sprinkle again with remaining nut mixture. Top the last layer of nuts with 8 layers of phyllo as you did for the bottom. Drizzle any remaining butter over top.

If you have time, cover and refrigerate for 30 minutes so the butter will set and make the baklava easier to cut. Using a sharp knife, make 5 cuts across lengthwise, then cut diagonally to form diamonds. Baklava is more difficult to cut after it is cooked because the pastry becomes so flaky. Bake for about 40 minutes until golden and flaky. If the top browns too quickly during baking, tent with foil.

To make the syrup: combine the ingredients in a saucepan and bring to a boil. Reduce the heat and let simmer for 10 minutes until thickened. Remove the orange peel, cinnamon stick, and whole clove; set aside to cool.

Remove an end piece of the baklava and tilt the pan to allow the butter to collect in the corner. Spoon out the excess and discard. With the pan flat, pour the syrup evenly over the hot baklava. Allow to stand for several hours before serving.

Yield: about 50 pieces, 25 servings
Prep Time: 1 hour
Cook Time: 50 minutes

edited to add.. those phyllo sheets come cut to size of the pans now. Much easier.

I eat fish so call myself a piscatarian and, although I cant be eating any meat at all (it makes me ill) think that it would be wrong to call myself a veggie.
Veggies dont eat meat, you see... :)

Yeah, I realize that. I prefer veggies and eggs to meat, but it's never been a "thang" with me. It's just what I eat the vast majority of the time. It's about preference, not about ideology for me. :)

OMG Tsa'ah! You now have my respect! I LOVE those hehe. I make them for my kiddos every once in a while and they sing my praises for hours afterwards hehe.

Oh and thanks for the recipes HN and Myshel! I am adding them to my list as soon as I'm done with this post. yum yum!

4 cheese quesedilla.

Flour tortilla
4 different cheeses
butter and salt if desired

Set pan on stove. Light that shit up. Put plain flour tortilla in pan. When tortilla starts to bubble, flip. After second rise, remove.

Put cheese into tortilla and fold. Butter pan, add salt if desired then tortilla. Cover.

5 minutes or so, remove lid, lift quesedilla, add butter and salt if desired, and flip. Replace lid.

Another 5 minutes later... lift lid and slide quesidilla onto plate. Wash pan. Cut and serve drippy. Yum.

PS. Swiss, American, Cheddar and Jack
