Armor mechanics is not my strong suit. How does the armor work regarding coverage and padding, with consideration to acessories.

Example:

5x HCP MBP - covers torso only
greathelm - decent damage padding

Would adding the helm increase the coverage to full plate equivalent? Also, how would the different paddings stack?

The helm will give you the penalties of full plate.

If they both had the same padding, the highest level of padding would count fully. However, since they are two different types, they are both halved. You'd get ~5 points of crit padding and ~4 points of damage padding on your head and neck, and ~10 points of crit padding everywhere else.

You will increase the protection from chain to plate for the area that the armor accessory covers; chain protection for non-covered areas. You would need to add arm and leg greaves for complete plate coverage.

And as Droit said, adding the helm will give you the full plate (AsG 20) RT adder penalty of 12 seconds but only metal breastplate AvDs and CvAs.
