I don't know anything about training a sorc, but I'd tank INF and put everything else at 100. That might be bad because monk CS is supposedly based off inf, but we'll see if that ever happens.

Interesting... I thought that there was a set of stats for human sorcerers to max out at cap. I can't seem to get it, i've run the cruncher a bunch of times.

1x shield/brawl, though you can do just shield or such if need be.

Spiritual Lore - Summoning.........| 130 35 - Summoning lore is fun, but if you need the points for 1x shield this would be a good place to pull from.
Sorcerous Lore - Demonology........| 130 35 - If you want to use CoS retribution try to shoot for a min of 50 ranks to minimize changes of backlash. Phase and Planar Shift are also tied to demonology.
Sorcerous Lore - Necromancy........| 170 70 - I'm guessing you use Pain Infliction a lot. If you don't consider cutting here for shield use.
Survival...........................| 145 45 - Fun, but points could be grabbed here for shield use.
Perception.........................| 197 97 - 1x Perception is pretty standard, but you could cut points for shield use.
Climbing...........................| 130 35 - Sufficient for non-scatter hunting.
Swimming...........................| 160 60 - Good for everywhere. Might want to consider going 1x if you hunt Nelemar and face the drowning maneuver.
First Aid..........................| 175 75 - Another area to cut for points.

I would concentrate on Minor Elemental over Minor Spiritual to maximize CS gains. As long as you're fixskilling, try dropping those 4 ranks of minor spirit and putting them into Sorcerer circle. You want to get to 121 ranks of sorcerer circle, THEN 73(75 for max bolt AS) minor Elemental, then 66 Spiritual, then the rest into Sorcer circle for maximum CS. You MAY want to grab those 6 spell ranks (4 Spiritual, 2 Elemental) and convert them into Shield use. You likely wouldn't feel the CS loss all that much.

So to review, I would drop all of Survival and First Aid and put the points into 1x Shield Use. If you still need more points, drop the all Summoning lore, Necro ranks as low as you feel comfortable, and perception (no lower than 30). Finally, drop the ranks above 50 in Minor Elemental and Minor Spiritual and convert those into Shield use as well if needed.
You will also likely want to go 1x brawling for defense, but this isn't nearly as important as the 101 ranks of shield use. To pull this off you would likely have to drop a lot of things like spell ranks (I would do 50/50/101), Mana Control (.5x one, .6x the other), and likely even Physical Fitness to the amount needed to get your health to max. Probably isn't worth it. It would likely be better for you to just dump all excess points into first Shield use, then Brawling.

Fallen's outline looks pretty good, i went the shield/brawl route and have been happy with it. If you're a CoL master then dropping first aid should be a no brainer since you get sign of clotting and sign of staunching. The only thing I would tweak differently is the spell training. I would work towards MnS - 64, MnE - 77 and Sorc 162 to get max CS at cap unless there's another formula.

I have a different opinion than most, but here goes.
You don't need brawling to do shield use, the key is a high enchant shield, preferably a tower. I have zero brawl ranks, self cast DS (with CoL signs) around 540-550 in guarded. Throw up a statue and you are golden, your prone offensive DS will be in the 430s, plenty to survive most temple attacks for a short duration.
The whole 1x MIU/AS is so absurd to me unless you use a ton of magical items/scrolls. I have 30 ranks each and am a bit post cap. I know they are cheap, but it is still 572k xp to go from 30 ranks to 101 in each skill. I hunt self cast in the temple, without walls up, and have zero issue. Only use statues when doing bandits and I rarely die from either bandits or regular hunting.
At 1x HP and 40 ranks each of the mana controls you get around 52 mana off node and 83 on, going to 1x gives you 61/92, respectively. Is that worth 600k xp to you? Your call.
Swimming and PF going from .5x-1x I noticed only a slight boon to dodging the drown maneuver and very little help avoiding charge.
Lores, as far as I'm concerned, are for RP only and are laughable compared to cost benefit when compared to other professions. Demon lore is good for helping some of our magic, but honestly, it's fluff. I think necro is awesome, but just a fun trick to vary things up, our spells are more than adequate to one shot most anything.
I recall from conversations in the past that your casting strength is your biggest issue when hunting the temple. It is simply safer, faster, easier and more fun to just dump ALL those extra points into nearly 3x spells. You will kill faster, safer and get the xp to catch back up all the more easily. Going from a ~490CS to 540 is a HUGE difference, evil eye everything, blow their arms off, or implode. Fast, fun, and NO MORE PLINKING.
