I have a number of 5x and 6x shields from the old system and I've seen a lot of people talking about unconverted shields and the like.
Would anyone care to explain this process? Why are unconverted shields more sought after? Having been away for a number of years I guess I missed this whole process.

Unconverted shields for the most part aren't more sought after. Why? Because for most people, either a tower shield or a buckler perform the best. There are anomolies to this, but they are few.
The basics behind shield conversion are that if the shield has an adjective that describes it as one of the types other than medium, you put it in the converter and it will change it to the type indicated by the adjective. So if your shield is called a "tower" shield but is still just a medium shield, you can convert it to a tower. The same goes for a buckler description, which you could convert to a small shield.
