What do you think is the worst crime out there?
Assault? Rape? Murder? Speeding? Homosexual necrophilic incestual cannibalism?
I think fraud is far under-punished for how negatively it effects our society.

I'm going to guess that's tuile.. some sort of cake (spice?), vanilla ice cream, and the sauce is creme anglaise? I don't think the second sauce is chocolate, though it is dark. Maybe some type of caramel sauce?
I could be totally off.

Close enough.
Stout cake with a chocolate filling, warm anglaise sauce on bottom, tuile with meringue dust, and (I think) vanilla ice cream.
Been a few years.

It really is amazing how fucked up anglaise can become, though.
When the savory students were doing their two-week pastry crash course, I saw one guy madly trying to save chunky anglaise.... with a spatula.

First class making hollandaise the chef gave someone a quart of yolks, a bowl, and told him to start making holldaise over the steam kettle..
Not knowing WTF to do, he kinda limped along and whisked the yolks over the steam...
A few minutes later the chef came back and was like "uhh... nice egg scramble, toss it out and get a new bowl"
No one knew wtf to do. And the eggs were fully cooked by the time the chef got back.
Great memories. Said person is now a sales rep. I think we crushed him on the first day. (Not that I would have done any better)

It's like a trip down memory lane! Even though we all sucked, when the lady who couldn't figure out how to balance her digital scale one week in was crying hysterically over a pop quiz about flour types, I knew she wasn't going to be around much longer.
