A couple of questions.

Does perception still aid against being ambushed by critters?
Does CM still add non-diminishing AS every (?) ranks?
When training polearms, is 'polearms' the only thing available to train in via the character manager which will give max AS?

As far as I know, perception is supposed to play a role in the ambush DS pushdown formula, yes. How much of a role is debateable. I, and most other people I've heard from, tend to think its a minimal effect ,at least against creature Ambushes like Executioners, Magus and Scouts. Not sure about versus PC ambushes.

CM training adds +1 AS for every 2 ranks of the skill. Capped only, as far as I know, by the number of ranks you can train in it.

I don't understand the polearms question. If there's a skill specifically in the CM for "polearms" then I imagine you have to train in that skill to effectively use them just like any other weapon type, I'm sure.
