Have Crit immune critters increased in numbers from the past? It seems like now every other critters got some kind of crit immunity... do they have crit padding now?

Many more critters have been added to crit immunity, yes. Most construct/golem type critters are now crit immune. We've speculated for a while now that many critters also have some type of inherant crit padding. Earth Elementals are a good example here. When you do the DF vs Plate numbers, it still doesn't come out right. It seems like they must have padding to make the numbers come out right.

Heh, I bet these only apply to physical attacks too... bet these things are crittable with spells?

They have roughly 20% Damage Reduction.
