What's everyone making/having for the Superbowl? I tried this one a few weeks ago & I everyone loved it so it's going on for tomorrow.
*Note on measurements* I've made this for the two of us, or for many more! If you're making it for 2-5, use the measurements given, if you're making it for more - just add more. This is a hard recipe to mess up! I've had my crock pot overflowing with this at times, but it all cooks down...
Also - the longer you cook this, the more likely you are to have shredded chicken. It's great that way! If you shred the chicken, you don't need to use as many chicken breasts!
Frozen Chicken Breasts (I try to use one per person - see note above)
1 can black beans - drained and rinsed
1 bag frozen corn
1 jar salsa (your choice - I like to use a chunky style)
1 block cream cheese (I use the 1/3 less fat version)
Put everything in crockpot (be sure chicken is frozen). Cook on high 6 - 8 hours (see note above). When there are about 30 minutes remaining, drop in cream cheese. If I'm home, I'll stir while cooking. To shred chicken - stir it all up towards the end. Blend in cream cheese and serve over tortilla chips or with tortillas - or with anything else you'd like!
