Is it possible for an open excel file to use a field from a closed excel file?

Yeah, you can reference cells from another spreadsheet.

Click "=" into the cell you want the data in, then go to the cell in the other file where you want the data to draw from and click on it. When you flip back to the original cell, you should see a bunch of linking text inside.

Oh my god, I seriously didn't think it would work like that . . . even though I do that within spreadsheets all the time.

I usually like to bring the other spreadsheet into the one I'm working with as a new tab; I tend to create and delete worksheets at an insane rate so I'm can never be 100% sure what I'm deleting isn't referenced somewhere else... well I can, I have software at work that does that, but I don't even let it get that far.

I've got a file that queries the server every hour, then I've written a production file that executes SPSS and does tons of data manipulation, exports the file to excel.

Then I publish a pdf of a separate excel file pulling from the constantly written over one.

Just keep in mind that if you move the file being linked to, or change the name of the file, the link will break.

Yeah, that's not a problem.

What IS a problem . . . is every time the file is linked file is rewritten (every day), updating the links results in a !REF error unless I manually open the source, which of course defeats the entire fucking purpose of doing it this way.

Is the file being linked to on a protected or otherwise acces restricted drive? Is it on a network, or is it local to your hard drive?

You can also link to Excel with Word, if that'll help.
