In my many years of experience (ha), I have come to learn that pancake making is a delicate art. Too much of one thing, you ruin it. Too little, you ruin it. Cook them with the wrong grease (Oil, butter, etc.), you ruin it.

A few years ago, I had this down to a science. I could make pancakes without thought and they always came out pretty uniform, fluffy, and good. Now I completely suck and I've messed it up about 4 times in a row on seperate occasions.

Anyone have tips on making pancakes? Or just their favorite ways to make them? I make them often of late and input would be appreciated.

Tip #1: Do not whip the batter... gently mix it until all incorporated.

Tip #2: Let the batter set for 15 minutes before making pancakes. It will provide much fluffier pancakes.

Get one of those "ketchup" squeeze bottles. The red ones like they use at picnics. Put the batter in there and squeeze it into the pan.
Perfect circles :)

Actually, my wife is a great cook. I just enjoy it as well and Pancakes are one of my specialties :) I do Sunday Morning breakfasts/brunches.

I heart pancakes. Do le mois pancakes. Click click freaking click pancakes! On a side note, my specialty is breakfast stuff (sammiches, pancakes, omelets) and I just make my pancakes huge. Use a little over 1 cup of batter and 3/4 water, and make about 3 big ones, and they usually come out pretty good.

I cook and clean too, but so does my guy. Amazing how happy we are, and how clean the place stays.
Oh, and I don't get psychobitchy to pay him back for being lazy and chauvanistic.
For the record, I'm not calling anyone those things. Whatever works for you .. well, works for you. :)

...buy some pre-cooked, refridgerated pancakes. Add butter and heat in microwave for 15 seconds.

You guys put way too much effort into these things.

This is why IHOP is open 24/7......

2:45 am she tells me to stop talking and to get up and some get pancakes.
