What's the advantages of learning tackle cman and guild for warriors and sweep for rogues?
Mechanical wise, of course.

the most obvious answer is, you don't have to spend your precious CMAN points for them. Leaving you more leeway to get cmans you can't otherwise learn.
In addition to that, a rank 5 cman skill is equivalent to having 50 ranks of the corresponding guild skill. i.e. 5th cman rank of tackle is equal to 50 guild ranks of tackle
you can, through the guild, get 63 ranks per skill. making a true guild-master slightly better with the skill than if they had 5 cman ranks of it.

but if you take both, what's the benefit?

None, they don't stack. I think whatever is highest takes preference over the other.
The only benefit used to be it would make training the guild skill easier. i.e. get rank 5 CM of tackle, then when you did tackle training you would be much more consistent hitting your targets for easier reps. That was a bug, and has since been fixed. (was supposed to have been)
