Crude, poor, fine, exceptional, outstanding, superb, and magnificent as far as I know, but this list is from GS3.

If the guy asks you for "fair" quality, that's anything above poor, in regards to the Adventurer's Guild.

Any dagger type will work. Shoot you need a blade type with fire flares in order to skin Troll Kings. The quality of the skin depends more on the skill of the skinner and and if you damaged the item you needed to skin. Example Cyclops eyes.. don't damage the eye the quality will go down.
