Just got off the phone with the GM at the place I am interesting in getting a job: They're having me fly down in 2 weeks for a food tasting. Woot!
Now I have to figure out what I'm going to make in a unknown kitchen, with unknown equipment, etc etc.

Most of my pictures didnt come out very well due to my flash :(
But here are some so-so pictures.
In the martini glass (hard to see)
From the bottom up:
Lemon-infused Muscato syrup (with fresh blackberries and mint)
Blackberry gelee
Lemon panna cotta (with fresh blackberries)
Candied Mint garnish
Peach dessert:
Fresh peach tower with mint and Creme Fraiche (Mint garnish)
Brandysnap tuile cup (empty), which holds Peach Sorbet
Peaches and Cream, a peach timbale (mold), inside is whipped creme fraiche & whipped cream mousse
Peach sauce
Anglaise Sauce
Chocolate Plate:
All desserts served chilled
Chocolate espresso mousse tower with Ganache and Cocoa Nibs
Chocolate sorbet (missing)
Black Chocolate cake
Marscapone espresso mousse
Chocolate sauce
Anglaise sauce

Congratulations! I think you'll really like that area. It's a beautiful place to live; although, really cold and miserable in the winter. The spring, summer and fall make it worthwhile. :)
