How many ranks does one generally need, I've got 15/15 is that good enough? What hunting areas could I not get into?

At least 30/30 by cap. I'd get more if you wear heavy armor or get encumbered a lot.

It all depends on your Strength, Constitution, Physical Training Skill and encumberance. 25 is generally considered the basic required amount. Add or subtract a little for personal taste.
