Say I were attacking with a Claidhmore and rolled a 140 endroll. Will I do more critting if I attacked with say a maul or twohanded sword with a 175 endroll?

What a terribly ambiguous question.
With the combat system in GS4, it's relatively difficult to answer that. It's impossible without more background information.

To expound a bit on Bob's answer:
Crit ranks are randomized in Gemstone IV. Claidhmores' weighting might not be randomized the way regular crit weighting is. However, claidhmores still require a rank 1 crit for their crit weighting to take effect. A 140 endroll might not be enough in some cases to reach a rank 1 crit, while a 175 endroll with a maul will. In those cases, the maul will "crit more".
If you were (for instance) assaulting a creature in Skin-class armor, the claidhmore would reach max crit rank 9 on a 140 endroll, which is as good as you can get. However, the greatsword would cause 47 raw damage, which is good enough to reach max crit rank 9 without any weighting at all.
What you should really do is determine your average endroll by taking your usual AS, your target's usual DS when you're attacking he, she, it, or them, the AvD you'll usually generate, and add 50. Then compare how each weapon you have available to you will do. If you have a very low average endroll, the claidhmore's weighting will be useful. Generally squares don't have very low average endrolls, though, and certainly not by the post-20 levels. The claidhmore's weighting is impressive, but it does not dominate the THW class.

Trying to figure out which weapon to bond to a +35 Maul or +5 Claidhmore Difference of 30 AS. Which do you suggest, on average?

If I bind with the Maul I get perma Guiding light (plasma) flares which can double flare at times... Hmm, I think the Maul is the best bet, what do you think?

Anyone know the ambush rank at which I would have greater then 50% chance of hitting my ambush mark with a Claidhmore?

Claidhmores are for hookers and fat people.
Which is why I own two.

CM also helps with open aiming, so try and get a lot of that too. Nobody knows exactly, but don't expect to aim well until at least level 40 if you're combined 2x in CM and Ambush.
I'd bond with the maul, probably.
