Giantman Ranger

If I wanted to create a Giantman Ranger who uses two handed swords, ambushes, hides and sneaks, and is a great skinner just to play around with a bit.... what would be a great way to set up their stats for optimal growth?

Well, my two handed ranger isn't set for optimal growth, in fact I wouldn't recommend it at all for a two handed ranger. Get your prime stats high, set your dex and agi as high as possible then get your important physical stats up.
