Hey! I got back from my competition a few minutes ago. Had a great time even though everything I touched got screwed up.
The biggest problem I had was that the oven was a deck oven and not a convection oven. When translated, this means that it takes forever to cook something. As a result, my squash didnt cook hardly at all, so I couldnt use it as a puree in my rice, or in my tuile. My tuile's didnt bake in time, even though I gave them 8 minutes to bake (they normally take 2-3 in a convection oven).
So, with no squash, and no tuile, my plate looked a bit pathetic. The judges were critical and it was a blast, everyone there had a great time. Here are some pictures.
