So after capping, what's the best order, in each's opinion of course.

Very interested in this thread.
For my own experience, coming up on 96, I figured I would get up to 1x Perception and then focus on spells to get my CS to a comfortable level. When to stop, and what to do after that, is a bag mysteries to me.

I think it largely depends on where you hunt.
In general, I think 1x perception, 1x pf should be baseline.
In terms of just hitting cap and where to go, I would submit:
1. Finish out your spell list
2. 12/12/12/12 elemental lores
3. CM to 20 for CDEF if you are in a maneuver area. get to 5/5 disarm if you are in a disarm area
4. 2x perception
5. 10 MoC if you are in a swarm prone area
6. Finish CM
7. This is where options open up- if you want to focus on 735, 2x mana controls, 2x MIU/AS, 2x HP. Finish out elemental lores- earth to 50 first.
If you want CS, consider some ascension. Fill out any secondary skills like climb/swim/trade. If you are getting hit or still maneuvers, 1x dodge slog.
If you are hunting fine, consider sorc lores. Necro has a lot of appeal, but YMMV. You can also look at the sorc proposal to see if demonology appeals.

good info... I'm a couple million past cap so I've already checked off 1, 3, and 5. I'll start with 2 and work my way through.

pretty much what was said, but i'd place sorcerer lore before at least more than what you likely have at fresh cap way before 2x perception.. and before 2x hp... The elemental lore suggestion is only strongly dependant on if you use 719 or 713... using 711 is why i'd lean quicker into sorcerer lore. with how cheap it is to get up to 5 disarm and cdef... taking 3 months to do that right at cap is a good idea

So, when I capped I had 0 spell aiming, but 100 ranks in necro lore. That made spell aiming to 2x my 1st priority so I could better rely on 708 and 720. If you're not 100 ranks in necro lore, but have 2x in spell aim, then perhaps necro lore is the an ideal 1st priority.
2nd priority was to get 3x spells. CS is king.
After this, I found SMR defense to be a priority. I got my perception to 2x and then combat maneuvers to 1x, so I could train the offending maneuvers and cunning defense.
With just 1x HP I would rely too much on Wracking, so 2x HP became my next priority which then made CoL pointless and I switched to Voln since I could finish a hunt very easily with my 400+ mana.
Then I went after ensorcell skills. AS/MIU (I also love infusion, so definitely wanted AS to be 202 ranks for the spell duration and to make infusing easier), SMC/EMC in that order.
Next comes the Demon Lore for the extra SMR defense and the amazing phase utility (740 is a very minor but handy boon). 102 ranks for that special phase threshold. This is 100% subjective, but that was my priority.
Elemental Lore came next, getting to 12/12/12/12 for 719, and then every non-square died to a single cast most of the time - even sometimes 1-shotting the squares (but my 717 was more reliable).
Then the interesting options open up. Dodge? Maybe... finish e-lores? Perhaps. Boost your tertiary abilities (survival, climb/swim, first aid, trading?) -- whatever you feel gives you the most for your TPs. 101 climbing appears to give you the ability to get in and out of Sanctum of Scales with a ton of encumbrance and no fall damage. Survival helps in the confluence and if you feel like voyaging into the desert in SoS (plus spotting bandit traps if you like bandits). I'm now pushing dodge to 101 by cutting back some of the above skills, so the grind is more bearable. Got 50 ranks, soon I'll re-dump my skills (working EMC/SMC back to 202) and max it out.

I'm about 2x cap so it's not exactly post cap goals, but close enough.
And by way, for brand new post caps, I recommend immediately 1x perception, 1x physical fitness. Getting CS to a workable level / CMan to get cdefense and either disarm or feint (depending on where you hunt) and some ranks of dodge. But hey, that's just me. You do you. Research for yourself...... All bets are off though if you can get your hands on a rotflare staff, get to 171 ranks of necro lore immediately.

I'd have thought 1x in Perception and PF would be baseline for for pretty much all builds regardless of level since the SMR changes

That's my minimum goal for all of my characters. 1x perception is pretty cheap for all professions and helps a lot with a several different combat systems and 1x PF isn't too expensive for pures but it helps so much that it's totally worth it.

Same, same. Mandatory for all levels on my characters these days.
I had 0x perception when I capped but that was a very long time ago, I was a glass cannon, and stuck in the old ways. There are probably still some sorcerers out there who haven't fully adapted to newer ways yet and still need to catch up post cap.

I think I did 0x perception on my warmage because my CMAN was making up the difference, but I don't have anything else that failed to train perception.
