How hard does this get with plain jane perfect weapons? Or swcp armor? So far my 33 de wiz with stats for cap without any special training has succeeded in bringing swcp brig to 5x, and 2 perfects to 5x...am I going to run into issues doing the 5-7x portions while I level?

As a Dark Elf you should be able to enchant a vanilla 7x common material while under lvl 50 assuming you're at least 1x in all the relevant magic skills, 25 wizard ranks and in a workshop with your familiar. Things start to get hairy when scripts, flares and ensorcells are added.

I did my first 7X under the old system at 35 and the new system seems even easier so I would bet that so long as you are a classically trained bolting wizard you should be able to do most anything that is somewhat weighted/padded up to 7X soon.

Enchanting to 7x is simple under the new system.
Any cookie-cutter wizard should be able to enchant plain items to 7x by level 40 at the latest. When you start adding in weighting, flares, ensorcell, scripts and whatnot.....then the difficulty starts to ramp up.
Also, don't worry about any "running into problems". A failed cast results the loss of 10% of what the actually cast would cost. If you wanted to do a +25 to +26 cast, that's 4800 essence. If by some chance you fail, you lose out on 480 essence. If you still have enough, you can just try to cast again.
The only time the failure penalty becomes irritating is if you're doing high end 9x-10x casts. Failures there could set you back a week before you might have enough essence again to make another cast.

My wizard is cookie cutter level 42 and he has done +35 on 6CER padded armor with zero issue, so drumpel's on the money about 7x/level 40 being very doable.
He gets the 'nearly impossible' messaging for some +31 6CER T1 KO flare gloves, though. I suspect the KO are the big penalty on those.

I bought a buffcoat at the Aug 2019 DR for my wizard, and I added 20 services to it. I have been slowly enchanting it while leveling up the wizard, and I kept track of his progress. He started to enchant it around level 34-35.
