I'm confused about how these shamblers can reduce my DS so much when it's so much higher for other creatures in the area. Those swords hurt when they hit :(

A ghost wolf claws at you!
AS: +143 vs DS: +200 with AvD: +37 + d100 roll: +51 = +31
A clean miss.
The wolf scampers southwest.

A dark shambler swings a blackened twohanded sword at you!
AS: +175 vs DS: +179 with AvD: +44 + d100 roll: +53 = +93
A clean miss.

https://gswiki.play.net/Multi_Opponent_Combat#Force_on_Force Are there multiple enemies in the room?

I've noticed something similar with giants up in Icemule, who also use THW. It's not FoF/MoC related because it can happen with only them in the room, but my DS is lowered by roughly the same amount. Maybe it's a size thing? How big are shamblers?

5ft or so

The dark shambler is medium in size and about five feet high in its current state.

Does it happen because of different DS against certain types of attacks? I think I've noticed when something tries to "ensnare" me my DS is lower than if it used another type of attack.

One ghost wolf and one shambler in the room, although a lone shambler will have the same effect even between one swing and the next.

No idea what's going on right now, this was all in the span of a couple seconds:
A dark shambler swings a blackened twohanded sword at you!
AS: +175 vs DS: +249 with AvD: +44 + d100 roll: +46 = +16
A clean miss.
>.903e mast
[Script 903e is running, Esc to cancel, Shift-Esc to pause]
>prep 903
>stance off
>evoke mast
Your hands glow with power as you invoke the phrase for Minor Water...
Your spell is ready.
>stance guard
You are now in an offensive stance.
>search mast
[script done]
You gesture at a ghoul master.
You hurl a seething blast of steam at a ghoul master!
By amazing chance, the ghoul master evades the bolt!
Cast Roundtime 3 Seconds.
>
A ghoul master pounds at you with its fist!
AS: +137 vs DS: +171 with AvD: +44 + d100 roll: +85 = +95
A clean miss.
>
You are now in a guarded stance.
>
Geez! It's still alive! Not a good time for that.
>
A ghost wolf tries to bite you!
You move at the last moment to evade the attack!
>
A ghoul master pounds at you with its fist!
AS: +137 vs DS: +231 with AvD: +44 + d100 roll: +18 = -32
A clean miss.
>
A dark shambler swings a blackened twohanded sword at you!
Amazingly, you manage to parry the attack with your runestaff!
>
A ghost wolf tries to bite you!
AS: +143 vs DS: +214 with AvD: +34 + d100 roll: +26 = -11
A clean miss.
A ghost wolf drools with ravenous hunger!
>
* Eirenanor just turned her last page!
>
A ghost wolf tries to bite you!
You barely manage to fend off the attack with your runestaff!
>
A ghoul master tries to bite you!
AS: +137 vs DS: +209 with AvD: +34 + d100 roll: +40 = +2
A clean miss.

That's a 40 DS difference between the first shambler swing and the ghoul master trying to bite me. I do not understand.

So after reading about FoF, that seems to be the case here. Whoever swings at me last will get the lowest DS. It makes sense practically, hard to defend against an increasing number of opponents.

For each creature beyond the first your stance is lowered by 25% after 4 you start to lose straight DS.
