Specifically fire elementals, is the only way to kill them rapid firing them with Earth and Ice? I'd rather not go to the hot side at all as fire elementals are immune to 512 but I'll bump into them when looking for the cold side portal.

Nobody? do I basically throw everything at them but the kitchen sink before they have time cast?

Major shock works well. Minor water. Elemental blast, particularly if you're not attuned to fire. There's no good way to keep them from casting aside from killing them quickly.

You can try using Slow. That will let you throw some additional bolts if you have rapid fire up.
