We made Christmas cookies today. I was wondering what cookies you, your mom, girlfriend, wife, partner etc make or what is your favorite.
We made:
Magic Bars
Turtle Bars
Chocolate Chip Cookies
Andes Chocolate Mint Cookies
Snickerdoodles
No bake cookies
Peanut blossom cookies (peanut butter with chocolate kisses.)
Fudge
My #1 baking tip, use parchment paper on your cookie sheets - your cookies will be golden brown and won't stick.

My sister and I always bake a ton of cookies for Christmas.. we get the kids involved to decorate.. our list usually includes..
chocolate chip
peanutbutter
peanutbutter chocolate chip
oatmeal
snickerdoodles
sugar cookies (about a million *groans*)
this year my sister wants to try some new kinds from differant countries

Every year I get stuck makeing them. It's usually about 30 dozen each of chocolate chip, Sugar cookies, Snowflake cookies and I'll usually throw in one or two kinds Ive never made before. yes it's like a fucking factory.
I get yelled at if I dont give everyone THEIR OWN box of cookies for Christmas :(

chocolate chip (hopefully, but probably not)
snickerdoodles (naturally)
snickerdoodles with walnuts (ew)
those cookies with the colored design (eh)
chocolate cookies with some kind of grated nut (eh)
M&M cookies (now we're talking)
And a bunch of others that I dig through in a pine-induced haze that are muy delicioso.

What is parchment paper? Is that like wax paper?

No. It can be baked and as was mentioned makes baking cookies and the like much easier. It allows for a nice bottom for cookies while making them slip off the paper when you are ready almost as easily as if it were teflon.
Your store will most like have it in the same section as wax paper although some carry it in the aisle with other baking goods.

Another tip, if you make something like mint cookies don't store them with the others. I just had to separate the cookies - the others were picking up the mint taste. However, they are really delicious.

The whipped shortbread are very easy:
1 cup butter, softened
1/2 icing sugar
1 1/2 cup all-purpose flour
1/2 cup cornstarch
Beat butter until fluffy; beat in icing sugar 1tbsp at a time until light and fluffy. Sift flour and cornstarch;stir into butter mixture one third at a time to make smooth dough.
Drop by tsp 1 in apart onto parchment (luv parchment) on baking sheet and press each cookie slightly with floured fork (sometimes I use my finger and put a cherry there)
bake at 300 f until firm, 20-25 min.(do not let tops brown)
You can freeze these in airtight container for up to a month.

Another tip, don't make those sissy cookies.
Get an ice cream scoop, nice big 5-6 inch in diameter cookies.
For the best texture with chocolate chip cookies, use the ice cream scoop (or sissy cookie scoop if you must) and drop each ball of dough onto a plastic-wrap covered cookie sheet ... side by side, not one on top of the other. Cover and refrigerate for a day, or until you need to back them ... I recommend a day at least. When you're ready for them, place them on a parchment lined sheet and let warm to room temp. Press each one down to 1/3 of it's height. The tops should feel slightly dry ... this is what you want.
Bake ... and check them with 3 minutes left. If they are puffy, take the sheet out of the oven and give it a firm level whack on the counter to "flatten" the cookies and put them back in the oven for the remainder of the needed time.
