So GS Wiki doesn't have much info in regards to lightening items. Is there any mechanical benefit to lightening a weapon? At some point does it reduce round times or just factor into your overall weight encumbrance?

For the most part, overall weight encumbrance only. Only potential to effect RT outside of that is for TWC there are potential penalties stemming from your offhand weapon weight.

Weapon weight also impact MOC cooldown times as well. For both focused and open MSTRIKEs, lightening a polearm by 1 pound resulted in a 1 second recovery time reduction. Sonic Weapon compared to Physical weapon differences were fairly substantial.

I did not do a comprehensive test of MOC recovery times for all weapon types or testing if it would change at other intervals of critters hit with the mstrike... but there is a correlation!

It absolutely reduces per hit cooldown times. I do not believe there total swing/roundtime impacts.
