So, I just started cooking things beyond crap like Hamburger Helper.

To this date I've done....

Crawfish Boils
Pan seared steaks
Marinates.

So, the first thing, I've done that for many people. They've all given me nothing but "best I've ever had" on multiple occasions. I've been paid for it.

Second thing, I've only done for me and my mother. They taste fucking amazing to me and my mother. She thinks I should open a business. She thinks the same for the above.

Third thing, I just started with that. Hell, it was pretty damn good.

Am I bragging? A little? Maybe I am. This thread is for all you fuckers bragging though. Post up shit you did that you felt was good. Text or pics.

I make a pretty banging Fourth of July burger, my red white and blue. Pinkish medium rare burger seasoned with salt, pepper and onion powder. Brie cheese and blueberry preserves on a toasted bun. Add with a side of fries and my own crafting of creamed sweet corn (almost dessert corn) using kernel corn and cold stoned creamery sweet cream coffee creamer. Delicious!

Also a good bacon wrapped Mac and cheese burger with home made 6 cheese mac and cheese topped although I tend to at time over cook the burgers because the bacon overlap, never burn but sometimes well done and man without those pink juices (insert random childish vagina insinuation) a burger can lose its luster

I love to cook, if you enjoy oatmeal a good substitute for milk is flavored almond milk like vanilla, add some nutmeg and cinnamon while the milk heats for that extra oompf!

Filipino chicken adobo is the most exotic dish I have made. I think there are two standard recipes for the marinade, one uses coconut milk along with soy sauce and vinegar and the other without the milk. The marinade with the coconut milk reduces down to an awesome gravy. I don't make it very often, your home will smell like vinegar for a few days after making it. It's a really good dish though, if you like the flavor of fermented foods.

Fuck Hitler and his instant oatmeal. That crap is horrible. I like mine old fashioned and organic, with raisins, walnuts, cinnamon, and a bit of yogurt. It has a nice nutty flavor.

It's not my recipe but if you like chicken and want it healthy. Runners world southern not fried chicken is quite spicy, super tasty and easy to make (8 pieces of chicken). Scroll through to the bottom for the recipe, read or don't the runners stuff but do highly recommend. Good with wheat berries (if you don't know you need to) or quinoa noodles or plain old rice.

I have had this in Kenya just last February, cooked by an elderly Filipino woman, and it was quite excellent.

They eat a lot of fermented food, at least that's my impression. I know there has been some recent research that attempts to make correlations between the lack of fermented foods in the western diet and certain diseases and such. Some of that shit is gross as fuck though.

There is a fair bit of fermented food in the western diet if you are wiling to embrace it. A lot of people just don't like the stuff. Sauerkraut is a good example. Home made sauerkraut is full of stuff that's good for you, and not terribly difficult to make.

I've never been a huge fan of sauerkraut. I've never actually eaten it, just doesn't smell good to me.

You should try the Bavarian style kraut if you try it. It's sweetened and has some seasoning to it, it's pretty good eating it straight when it's nice and cold. Still stinks though.

Turkey cordon bleu:

Get those shady brook farm turkey cutlets in the vacuum sealed containers. They work the best, and come 4 to a package.
4 slices swiss
4 slices ham
enough flour to coat em up real good
some paprika to put in the flour
8 toothpicks to keep everything together

1/2 cube of chicken or veggie bullion, smashed to fuck, or the loose "OX" brand that you have to scrape out of the jar if you live in a humid area.
1 tsp of the 'better than bullion' (I use veggie)
1 cup hot water
I add a heaping spoonful of minced garlic

1 cup heavy cream
some cornstarch (we get the ARGO fuck your self brand, because of the joke)

BUTTER. like.. a 1/4 of a stick


Start:
Put your butter in a pan with high sides, with the temp on low. Your pan does have a lid, right?

Pound your meat flat. Then pound the turkey cutlets flat.
Fold your swiss cheese slices in half.
Wrap your ham around the cheese like a burrito.
Place your ham and swiss burrito at one end of the turkey cutlets, and roll them up like a meta burrito.
Stick toothpicks in the ends (sides?) to seal them shut, which helps keep the swiss inside.

Toss your meta burritos in the flower and paprika mix, covering fully.

Mix your water, bullions, and garlic.

Turn the heat up on the butter, wait for the bubbles.

Toss the meta burritos into the butter, turning them after a minute or so to seal the moisture in.
Toss your bullion mix in, stir a little, and cover the pan after.
Turn the heat to low/simmer.

Mix your cream and starch together (hint, put the starch in first, then add a little cream. Mix that together until it's like thick paste, then start adding more cream.)

Let cook for about 30-40 minutes, checking infrequently and moving the meta burritos around a little bit.

After meta burritos are finished cooking, remove them from the pan and take out the toothpicks - I keep a set of pliers specifically for this and hold them IN the pan with tongs to prevent them from being launched into space.
Put on plates.

Turn heat back up to medium-high-ish, and stir in your heavy cream and corn starch mix. Tell whoever's listening to ARGO fuck yourself.

Wait for thickening. Giggle to yourself about thickening.

Put in one of those nice pourers, or just say fuck it, I'm not doing more dishes and pour it straight on the plate.

Enjoy!

(I prefer this with rice pilaf that you can do in the microwave, and a salad. It reheats well if you slice up the meta burrito a few times.)

I just made Omelet in a hole for the first time. It is fucking easy and delicious. Recipe just popped up on my FB, thank you Zuckerberg.

You basically just cut a hole in bread and put whatever you like in an omelet in there and then pour beat egg in that. Like 5 minutes later you flip it and then 3 minutes after that you have a pretty delicious thing to stuff in your mouth.

My only qualm with that recipe is the lack of garlic. I'd add 3-4 diced cloves of sauteed garlic to the sauce. I usually add shrimp, but just about anything works with it - notably chicken and clams.

My husband is the cook in the family but I am a decent baker. My best dessert is a New York style cheesecake that honestly tastes better than any we've ever tried, whether store bought or restaurant. I make a mean tiramisu and baklava as well.

I got from Shreveport to NO in 3 hours 10 minutes before. It was right after Katrina when almost every cop in Louisiana was in NO, so I was going at a high rate of speed.

i should have gathered that from that baking comment that you meant the mixer... Baking and me aren't on the same page...I can respect that though... I don't feel it practical if were you're one appliance to add to the kitchen to cook meals on though. perhaps i didn't specify what i meant... the most versatile/ you only had that to cook on forever... sort of utensil

Good knives are where it's at. I work with a guy who went to culinary school. I can't recall the price of his knife set but they were made in Germany and cost about the same as a very cheap automobile. I don't have great knives, but I do want at least 1 really great knife. Just one to get started on a collection.

The one kitchen item that is noticeable by it's absence in my house is a food processor.

What's that griddle like? Mine is cheap and shitty but I can see the value of a good quality griddle.

Or whatever and as long as the coils have cooled i can drop it in the sink clean it.. and make eggs bacon and pancakes on different sides of it in the am

Mine is so cheap that I can't hardly control temp. I think buying a good one with a heavy cooking surface is in order because I agree about the versatility and it's still wonderful for pancakes.

Don't need it in the warm weather but come winter it's used everyday.Im in texas so i don't have that.. but a couple ounces of water and or oil and butter followed by a lid is how i have steamed many vegetables.. if you are creative i feel its the best thing in the kitchen.. it can even heat up the coffee or tea for you

I like the asian store because,they sell cuts of meat I cant get at the supermarket. Things like pork belly. Hell, its worth a trip just for the pork.

Don't buy a set. They're bullshit value.

You need exactly 3 knives to operate in a home kitchen: a chef's knife, a paring knife, and a serrated bread knife. Some would argue for a boning knife, but I bone just fine without one.

I really dig Wusthof and Henckels stuff. Globals are nice if you can deal with their handles. Shun's excellent if you're a fuckin' weab.

I'll try to put this thread back on topic... If you had only one thing you could keep in your kitchen to use to cook... I'd keep my griddle all day, i can use it to toast shit, fry shit... make pancakes do whatever... the rest of that shit...doesn't have the versatility.. anyways... Speaking of which, slow cookers are amazing. Toss all your ingredients in at the beginning of the day, and when you get home from work you have a hot meal waiting for you.

To save some money on beef we've been buying these big ass briskets which we cut up and cook in the crockpot. It's been pretty good. I'll also get a whole frozen chicken and crockpot that with vegetables and water. Make a soup with liquids and dark meat then cut up the breast for chicken salad.

I think we'll have to try that cabbage stew. How much wine do you use for that Taernath?

Half cup to a full cup for a 6 quart cooker. I didn't include exact measurements because the recipe is pretty modular and you can just swap out or add in whatever you feel like. I also use the juice from the tomato/bean cans because it adds more flavor and thickness to the broth.

I know it's not the same, but an awesome pot roast can be made in a slow cooker too... with a couple 16 oz cans of cream of mushroom, about 1.5 lbs of carrots, 3 lbs of chuck roast... and 1 yellow onion and some garlic salt pepper.. I also add real mushrooms when i do it because i use the extra part of there being so much soup to cover the mash potatos i eat with it and i like to eat the mushrooms as part of it. I dont think the mushrooms do much for flavor so i let them in about 6 hours into the 8 hour process and like i said they are a garnish for the potato anyways.

been on a baking \ cooking binge lately.

Kringla:

1/4 c butter
1 egg
3/4 c sugar
1/4 c butter milk (works fine with just 2 % milk)
1/2 c sour cream
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp vanilla or Almond extract
2 1/4 cup sifted all purpose flour

Cream butter, egg and sugar. Add sour cream, butter milk, vanilla, Baking powder/soda and salt. Sift flour into mix as mixing, the finished dough should be just a little drier than cookie dough.
Cover dough with plastic wrap and let chill in the fridge for 20 minutes. Roll dough out into 8 - 10 inch lengths roughly a 1/2 inch thick. Tie individual lengths into figure eight or pretzel shapes and place on cool cookie sheet.
Bake in a preheated oven @ 425 for 7 - 8 minutes. (Add a pinch or two of nutmeg in the mix if you're using vanilla extract for an eggnog taste)

Spread with a little butter, eat.

Bagels:

4 1/2 c al purpose flour.
1 1/4 c warm water
2 tbsp extra virgin olive oil
1 tbsp salt
1 tbsp yeast
pot of boiling water (slightly salty to taste)

Add yeast to 1/4 cup of your warm water, let bloom.
Add salt to flour, make mound with flour and put a hole in the center of mound. Add olive oil to hole and your bloomed yeast. slowly add remaining warm water to dough as you knead. Continue to knead dough until smooth. Dough will be pretty firm when finished, don't knead dough on a floured surface. Place finished dough ball in oiled mixing bowl and let rise until double in size.

Cut dough ball into sixths, roll pieces into individual balls and form a doughnut shape, again don't use a floured surface. Let bagel dough stand for 10 -20 minutes covered with a cloth. Bring a stew pot full of your salty'ish water to a boil, place bagel dough in boiling water, don't let individual bagels overlap while boiling. Boil for 1 minute on one side, flip and boil for another minute. Place boiled dough on rack and let rest for a few minutes.

Dab tops of boiled dough in sesame seed (whatever you like on your bagels), place on heated cookie sheet (heat cookie sheet up inside oven when you pre-heat) and bake in a preheated oven @ 400 for 25 minutes. Let cool when finished.

I got an air fryer. Great for pork chop tenderloins. I did steak in it too, and that comes out pretty good, but I still prefer grilling for that.

It does both.

I cooked more than Hamburger Helper well before that date, I was just very lazy with cooking and it was super easy.

Not gonna lie, I really want a hot dog toaster now. I fucking love hot dogs and I don't eat nearly enough of them.

I love cooking so much. I always have, but quarantine really got me to step up my game a notch. Started baking breads, pickling veg, etc. Started seeking out recipes that seemed a little harder, like this dank ass croissant bread pudding that I normally would have been like nah, too much effort. So worth it.

I used to love the cheeseburger mac. I recently made it for the first time in 10+ years after seeing a friend post it, and I feel like they changed the recipe. Didn't taste anywhere near as good as it used to.

I've really made a lot of new stuff during q-tine. I'm most proud of my beef tips and rice. Two hour long recipe, and it comes out amazeballs.

I've actually been doing bread for years. I have a bread maker though.

We both had it at the same time, she was bedridden for like 3 or 4 days, fever, nausea, coughing, all that stuff. I lost smell and taste for a week or two, and never really fully.

I've made bagels a couple of times. They are a ton of work. Mine never looked uniform, but they sure were tasty.

I watched a video of some old Jew making them that I'll try next time. I also think I'll add a touch of sugar, these didn't brown as well as I like them to look. Probably also add cinnamon and raisins the next time too.

Been watching videos for baklava, fucking shit is delicious but a ton a work. Probably try that next week.
