Trying to figure out which would be best/the most fun. I like the idea of the extra screen scroll from the flares, but wasn't sure if crit weighting would be a lot more effective. Any insight would be appreciated.

It depends.
If you're going to buy/create a really awesome pair of weapons, I would either get a flare that isn't going to be weak in some areas, or go with the weighting, but for TWC, I actually think high enchant is more important. It's all about getting hits in that are sufficient to overcome the times that you miss because of EBP or high DS, and there's nothing worse when berserking or mstriking than swinging 16 times at something you can't hit. If going the route of the high end set, I would go with two high enchant handaxes and worry about flares/weighting later. Perfect ones would also be a plus.
Alternatively, if you don't want to spend much and aren't going to focus on a core set of a couple of weapons, then go out and buy a bunch of flaring axes of all types and mix and match depending on situation/location.
Note that things would be different for you with smaller weapons. With smaller weapons, flares become much more important.

I was thinking a couple of realm flarers and then a 6x perfect and a 7x perfect. I didn't want to go buying the realm flarers though if I ended up needing/wanting crit weighting.

Realm flaring would possibly work well, but may not be worth the $ if you're not going to be moving around. Weighting is always a nice thing, but again, it depends on whether you are working towards creating a family heirloom, or just want to go out there and smash things without spending a lot.
